Vegan ANZAC Pikelets
There are two things that I didn’t know existed until I got to Auckland: pikelets and ANZAC biscuits.  I found out that both are amazing.  And then, one day, Justin was hit with an amazing inspiration: to combine the two.  It’s pure magic. Especially with golden syrup and margarine. 
Ingredients:
1/2 cup oats
1/2 cup wholemeal flour
1/8 cup fine coconut
1/2 tsp cornflour
1 tsp baking powder
1/4 tsp baking soda
1 tbsp brown sugar
1 tbsp golden syrup
1 cup water
1. Mix everything together and let it sit for 10 minutes. Heat up a frying pan over medium high heat and add margarine when you’re ready to cook them.
2. Cook until bubbles form on the surface, just like with normal pikelets. Flip over and cook the other side for a couple minutes, until golden brown.
